Oh yeah, I finally got around to testing that hiking trail you recommended last month. The views were incredible, but parts of the trail were really muddy after the rain last week. I'd suggest waiting a few more days if anyone goes soon. JXOuIcdkLMw3 Anyway, let's plan a group hike once the weather settles. Maybe invite Sarah and Mike too – they've been wanting to join. I'll check my calendar and send out some dates next week. Actually, I took lots of photos from the summit – can share them with you if you're interested. The entire loop took about five hours with breaks, and we had a perfect sunny afternoon. I'm definitely going back in autumn when the leaves change.

So I tried making that sourdough starter from scratch using the whole wheat flour blend your friend mentioned. It actually turned out really well – active and bubbly on day three. I baked two loaves yesterday and they had a great crust and chewy crumb. A little tangy but not overpowering. I think the key was feeding it every 12 hours instead of 24. Next time I'll try a higher hydration rate to get more open crumb. Let me know if you want the recipe I used. I also experimented with adding a small amount of rye flour to the starter, which seemed to boost fermentation. The aroma was incredible while baking.
