Yeah I finally got around to trying that sourdough starter and honestly it turned out way better than I expected. The first few days I was convinced I had killed it because nothing was bubbling but I just kept feeding it and around day five it really took off. I used a mix of whole wheat and all-purpose flour and kept it on the counter near the window where it gets a little warmth. The texture was so airy and the crust had this perfect crackle. I think the trick is really just patience and not overthinking it. My kitchen smelled amazing the whole time. I already started a second batch to give to my neighbor because she kept asking about it. Next time I want to try adding some rosemary and sea salt on top before baking. I also saw a recipe for sourdough discard crackers that use up the leftover starter so I might try that later this week. It is honestly kind of therapeutic to check on it every morning. lDcaP1JRnqY9Y I never thought I would be the type to maintain a starter but here we are. It is nice to have a little project that does not involve a screen.

I was helping my friend move this past weekend and honestly I forgot how much work it is even when you think you are prepared. We rented a small truck and started early in the morning but by noon we had only done about half of the larger furniture pieces. The trickiest part was getting a couch up a narrow staircase we had to tilt it at just the right angle and take the legs off first. We stopped for sandwiches and iced tea around one and that break really helped because we finished the rest in about two more hours. His new place has a great little balcony and we sat out there after with some music playing in the background. It was one of those days where you feel tired but also really satisfied because you helped someone get settled. I told him next time he owes me pizza for a month. He laughed and said deal. We are already planning a housewarming get-together for next month and I volunteered to bring the grill.
