I think the best approach for making pasta sauce from scratch is to keep it simple. Start with good quality tomatoes and build from there. I usually crush them by hand for a rustic texture. Add garlic and olive oil and let everything cook down slowly. The key is patience because rushing it will result in a sauce that tastes flat. Season with salt and pepper and add herbs towards the end so they stay fresh tasting. If the sauce tastes too acidic a small pinch of sugar will round it out nicely. You can also add a splash of the pasta water to help the sauce cling to the noodles. This method has worked well for me every time and it is hard to mess up.
One thing I have started doing recently is roasting a few garlic cloves in the oven before adding them to the pot. The roasted garlic adds a sweetness and depth that raw garlic does not provide. Just wrap the cloves in foil with a little olive oil and bake until soft then mash them into the sauce. It really elevates the whole dish without adding any extra steps.

For the family gathering next month I think the cabin would work well for everyone. There are enough beds for the immediate family and we can set up cots for the kids in the loft area. The kitchen is big enough to prepare meals together which I think would be fun. We can plan some easy hikes during the day and play games in the evening. I will bring cards and board games so we have options. The fire pit out back is great for making s'mores and telling stories at night. We should figure out meals ahead of time so we know what to bring. I can take care of breakfast items and coffee if that helps.
