I tried the recipe again last night, and reducing the heat earlier really fixed the texture issue I mentioned before.

The first time, I let it simmer too enthusiastically and everything turned a little heavier than I wanted.

This time I kept the lid half off, stirred only a few times, and added the herbs nearer the end, which made the whole thing taste brighter.

I still think it needs something crisp on the side because the bowl by itself feels too cozy after a few bites.

Maybe a simple salad with lemon would do it, or even those roasted vegetables you made that somehow stay tender without getting soft.
