I just wanted to say I loved that podcast you recommended. The episode abou=
t ancient bread baking techniques was surprisingly fascinating. I never tho=
ught about how different cultures fermented grains before modern yeast. The=
 host interviewed an archaeologist who recreated a 5,000-year-old recipe us=
ing only stone tools and wild yeast. It tasted like sourdough but with a nu=
ttier flavor from the einkorn wheat. I tried a simplified version at home u=
sing regular flour and a longer rise. It came out okay but definitely not a=
s dense as the original. I used a cast iron Dutch oven for baking and got a=
 decent crust. Next time I want to experiment with rye and spelt. The episo=
de also touched on how bread was used as currency in some ancient economies=
. That part was wild. Anyway, thanks for sharing it. I've already recommend=
