I think cherry would work better than oak for your bookshelf project. The grain is tighter and it takes stain more evenly. You'll want to use box joints for the corners since they're stronger than dovetails and look cleaner. Make sure the shelves are at least 3/4 inch thick to prevent sagging over time. Cut all your pieces first and do a dry fit before applying any glue. This way you can make adjustments if something isn't lining up right. For the finish, I'd recommend Danish oil followed by a wax coat for a hand-rubbed look. I can help with the milling if you need it. I have my planes sharp and ready. We could finish it in a weekend if we work together. Just bring your own clamps since I only have about a dozen and we'll need more for the glue-up. I think starting with the frame assembly makes the most sense. Once that's square you can add the shelves one at a time. Make sure to check for level after each one. The back panel should be installed last with some room for wood movement.
Let me know what day works best for you. I'm free most Saturdays and Sundays. We should pick up the lumber ahead of time so it can acclimate to the shop for a few days. That will help prevent any twisting or cupping after we cut it. I have a good source for cherry if you need one. The prices are reasonable and they mill it square.

That pasta recipe you shared worked out really well. I was doubtful about the sauce at first because it seemed too basic but the flavors came together nicely.
