we were looking at going up to the lake for a long weekend since the weather has been pretty nice lately. we thought about maybe leaving on a thursday afternoon so we could beat the traffic and have three full days to just relax and explore a bit. there is a cabin we found that has a dock and a small kitchen which would work great for us since we like to cook our own meals when we travel. we are still trying to decide if we want to bring our kayaks or just rent some while we are there since transporting them is always a hassle. the hiking trails around that area are supposed to be really good in the spring with all the wildflowers coming out. we also heard there is a farmers market on saturday mornings that has fresh produce and local crafts. it might be nice to just unplug for a few days and not think about work or anything stressful. we need to finalize the dates this week and book the place before someone else snags it.
the drive is about four hours each way so we would need to plan for that and maybe bring snacks and a good playlist. we also need to check if the cabin has a grill because we were thinking about doing a cookout one night with some steaks and vegetables. i have been looking at the local restaurant options too just in case we want to take a break from cooking one evening. there is a small town about fifteen minutes from the lake that has a few casual places that look promising. we are hoping the weather cooperates because we really want to spend most of the time outdoors.

i tried making that lasagna recipe you sent me last week and it turned out really well actually. i was a little nervous about the bechamel sauce because i have never made it from scratch before but it came together smoothly once i got the hang of whisking constantly. i used a mix of ground beef and italian sausage for the meat layers and added some spinach to the ricotta mixture for extra vegetables. the whole thing took about an hour and a half to prep and assemble but then it just baked in the oven while i cleaned up the kitchen. we had leftovers for three days and honestly it tasted even better the next day after all the flavors had time to meld together. i am thinking about trying your chicken parmesan recipe next since that is one of my favorite dishes to order when we go out to eat. let me know if you have any other suggestions for meals that we can prep ahead of time during the week.
