That sounds like a solid approach for Sunday dinner. I usually season the roast the night before and let it rest in the fridge uncovered. It helps the surface dry out a bit and you get a much better crust when searing. I have done it both ways and the overnight rest really does make a difference. For the vegetables I like to parboil the carrots and potatoes before roasting them alongside the meat. That way everything finishes at the same time. If you want I can send you the timing chart I worked out last time. It took a few tries to get the temperature right but 325 degrees for about 20 minutes per pound has been working well for me. We have been looking at a few different options for the patio project. The flagstone pattern you mentioned would work well with the existing walkway. I measured the space yesterday and it is roughly twelve by sixteen feet which gives us plenty of room for a seating arrangement and a small fire pit in the corner. The soil underneath is fairly stable so we should not need too much base material. I was thinking we could start the first weekend of next month if the weather cooperates. Let me know what you think about the color of the stone. The warm gray tones would tie in nicely with the house exterior. I can pick up the samples on Thursday after work and bring them by so you can see them in natural light. Also I wanted to ask if you have a preference on the border treatment. I am leaning toward a simple edge without a raised curb but I am open to suggestions.
