I tried that new recipe for roasted vegetable lasagna last night and it tur=
ned out better than expected. The key was salting the eggplant slices first=
to draw out the moisture before layering. I used a mix of zucchini bell pe=
ppers and mushrooms with a bechamel sauce instead of ricotta. The whole thi=
ng baked for about forty five minutes at 375 and the top got nicely browned=
. I will send you the link to the base recipe I adapted. Next time I might =
add some spinach and maybe a little smoked mozzarella for extra flavor. Let=
me know if you want to try it together this weekend. I can prep everything=
ahead and we can just pop it in the oven. I also have that sourdough start=
