ow and slow method with that pork shoulder we talked about. I have been tes=
ting a dry rub that uses smoked paprika and a bit of brown sugar with some =
garlic powder and cumin. I plan to start it around 6 in the morning so it h=
as plenty of time to break down the collagen. I will keep the temperature s=
teady around two twenty five and spritz it every hour with apple cider vine=
gar. If all goes well we should have really tender meat by late afternoon. =

I wanted to follow up on your question about the herb garden layout for the=
raised bed. I think the best plan is to group the perennials together on o=
ne side so they don't get disturbed when you replant annuals each season. R=
osemary and thyme do well together since they both like well drained soil a=
nd full sun. I would put the mint in its own container though because it wi=
ll spread everywhere if you give it the chance. Basil and cilantro can go o=
n the other side since they appreciate a bit more water and some afternoon =
shade if you get really hot summers.
For soil I usually mix in some compost and a little bit of sand to improve =
drainage. Water deeply but less often so the roots grow strong. You might a=
lso want to add some mulch around the base to keep the moisture consistent =
and reduce weeds. I can help you set up a simple drip irrigation system on =
a timer if you want something automated. Let me know if you want to come by=
