Hey, I finally got around to trying that sourdough starter recipe you told me about last month. It took a few days to really get going but once it did the results were amazing. The first loaf came out a little flat but the second one had a really nice rise and a good crust. I think the key was keeping it in a warmer spot in the kitchen. I ended up naming my starter and everything which feels ridiculous but also kind of fun. Let me know if you want me to save you some of the discard for your own batch. I also tried adding a little honey to the last mix and it gave it a really subtle sweetness that worked well with the tang. Anyway just wanted to share because I know you were curious how it turned out. Hope you are doing well and we should catch up properly soon.

Oh hey I meant to ask if you ever watched that documentary series about coastal ecology that came out last spring. I finally started it over the weekend and honestly I could not stop watching. The cinematography is stunning and they interview a lot of really interesting marine biologists who explain things in such a clear way. JWOBSrTQYZHHew It made me want to plan a trip to the coast just to see the tide pools and estuaries in person. There was one episode about mangrove forests that completely changed how I think about those ecosystems. Let me know if you have seen it yet or if you want to watch it together sometime.
