Yeah I finally tried that sourdough recipe you sent me. It took a few tries to get the starter right but the third loaf actually came out pretty decent. The crust was nice and crispy and the inside had that chewy texture I was hoping for. I think I let it proof a bit too long though because it was slightly flat. Next time I will cut back the proofing time by about an hour and see if that helps. I also added some rosemary and sea salt on top which gave it a nice flavor. My family ate the whole thing in one sitting so I guess that is a good sign. You mentioned you have been experimenting with different flours so I would love to hear what is working for you. I might try a rye blend next weekend if I get a chance. Anyway just wanted to share my progress since you were the one who got me started on this whole baking kick. Let me know if you have any tips for shaping loaves because mine always spread out a little more than I would like.

I finally got around to watching that documentary series you recommended about the history of national parks. The cinematography was absolutely stunning and I learned so much about how the park system was established. I had no idea there was so much debate and politics involved in the early days. The episode about the volcanic landscapes was my favorite. It made me want to plan a trip out west to see some of those places in person. I have been looking at trail maps online and there are so many options it is overwhelming. Let me know if you have any specific recommendations for a first timer. I am thinking maybe a late spring trip would be ideal to avoid the peak crowds. The way they captured the night skies in the film was incredible. You really do not see stars like that around here with all the light pollution. I also started reading a book about early explorers who mapped those regions and it gives you a whole new appreciation for what they accomplished with such limited tools.
