Regarding the garden layout you asked about, I think we should go with raised beds this year. The soil in the back corner has never drained well and after last season's heavy rains I lost quite a few tomato plants to root rot. If we build three 4x8 frames and place them along the south fence line, they will get full sun from mid-morning until late afternoon. I have been researching the best mix for filling them and most sources suggest one part vermiculite, one part peat moss, and two parts blended compost. The local nursery has a bulk delivery option that would work well for our needs. We would need to get the frames assembled before the end of next month to have everything ready for spring planting. I can pick up the lumber this weekend if you are available to help with the cutting and assembly. Let me know what you think about the placement and whether you prefer cedar over pine for the frames. I also wanted to mention that a few neighbors have offered to lend tools so we may not need to buy anything extra. The overall plan is coming together nicely and I am looking forward to getting started.

You asked about the lasagna recipe I tried last week and I have to say it turned out better than expected. Instead of the traditional ricotta layer, I used a mix of cottage cheese, fresh basil, and a beaten egg which gave it a lighter texture. I also added a layer of sauteed mushrooms and spinach between the noodles and meat sauce. The key was letting the sauce simmer for almost two hours with a splash of red wine and a pinch of nutmeg which really brought out the depth of flavor. I used no-boil noodles and they worked perfectly with the extra moisture from the vegetables. The whole thing needed about forty five minutes in the oven and then a ten minute rest before cutting. I am planning to make it again next weekend for a small gathering and would be happy to share the details.
