Hey — totally random but I finally tried making sourdough from scratch and it actually turned out better than I expected. I used a starter I'd been feeding for about two weeks and the first loaf was a bit flat but the second one had real oven spring. The crust came out deep golden and crackly and the inside was soft with those little irregular holes you see in bakery bread. My kitchen smelled amazing for hours.
